Clone: Own rooted IV7 – Vines planted in 2000.

Sourced solely from Lone Star Creek Vineyard, Upper Yarra Valley

Total crush: 127 dozen

Analysis: Baume: 12.2; pH: 3.30; TA: 6.0 grams/litre

Crushed, pressed & cooled at receival, barrel fermentation to zero residual sugar. A portion (about 20%) left on skins in seasoned oak for colour and complexity.

Yeast inoculation.

Maturation on lees in used French Barrique (225l) before transfer to stainless steel prior to bottling.

Cold stabilised, filtered and bottled 23 July, 2019.

Tasting notes:

Spices, pear and apple offer pleasant aromas followed by a nicely balanced combination of acid, oak and fruit in a well rounded palate with a lingering finish.

It’s pretty much everything you could hope for in a Pinot Gris. It’s aromatic, textural, rich with flavour and the finish boasts noteworthy persistence. It’s balanced too: nothing sticks out, not the oak, not the acidity, nothing. It feels refined even as it bursts forward with flavour.
