Bottled: 11 February, 2024
Crushed, destemmed and cold soaked for two days. Pressed & transferred to barrels for fermentation to zero residual sugar.
Yeast inoculation
11 months maturation on lees in used Hogs Heads (300l) before transfer to stainless steel prior to bottling. No sulphur added until October, 2023.
Contains preservative – SO2
Vegan friendly: no animal products used.
12.0% alc/vol; Approx. 7.1 standard drinks.
Tasting notes:
This is a serious wine with deep yellow colour with a golden hue. The bouquet is a cocktail of tropical fruits and gooseberry fool. On the palate this wine has personality with a lot going on – there’s complexity, weight, and texture from the time in seasoned oak and no intervention for nearly eight months. Soft acids, almost creamy mouth feel. Very un-sauvignon blanc like.
Would be great paired with delicate cheeses, or other less strident terrines.
