Sourced solely from Lone Star Creek Vineyard, Upper Yarra Valley

Total crush: 125 dozen
Analysis: Baume: 12.4; pH: 3.10; TA: 6.5 grams/litre
Crushed, pressed & cooled at receival, barrel fermentation to zero residual sugar.
Yeast inoculation.
Maturation on lees in used French Barrique (225l) before transfer to stainless steel prior to bottling.
Cold stabilised, filtered and bottled 21 September, 2021.
Contains preservative (H2S)
Tasting notes:
Spices, pear and apple on the nose offer a sense of what is to come. In the mouth the wine is a nicely balanced combination of acid, spice and fruit in a well rounded palate with a lingering finish.
Great with lighter meals or on the patio with savoury nibbles.
